Sustainability article:
Talk Turkey This Thanksgiving
October 28, 2009
Source: Community Partnership Update/November 2009
Traditionally, Thanksgiving is a day to give thanks for the bountiful harvest and convey appreciation for family and friends who have gathered in celebration.
The centerpiece for most Thanksgiving meals is the beautifully-browned turkey, carved to perfection. This year, cooks can serve delicious birds raised on a turkey preservation ranch -- brought to you exclusively by Emory's Sustainable Food Initiative and Heritage Foods USA. These turkeys, also known as heritage turkeys, are raised in a manner that more closely matches the natural behavior and life cycle of wild turkeys.
Heritage turkeys are praised by chefs as being richer in flavor than industrial birds. In addition to a difference in culinary characteristics, heritage turkeys are often considered to be a healthier food. Heritage turkey meat contains higher levels of omega-3 fatty acids, which helps prevent heart disease.
These heritage birds were almost rendered extinct but through conservation efforts, they have recently been taken off the endangered species list. Heritage turkeys can only be preserved when cultivated in large numbers for a consumer market. To help preserve an older breed of fowl, order your heritage turkey by visiting www.heritagefoodsusa.com.
